Our Ceviche Peruano is a bright and delicious appetizer! Made with fresh Mahi that’s marinated in Leche de Tigre, combined with red onion, poached sweet potato, chulpe and choclo (two types of corn), and cilantro. This dish originates from Peru and is different from other styles of ceviche in Latin America.

Chantico, the Aztec Goddess of fire, hearth, and home, is the inspiration behind our logo. She is best known as the protector of the domestic fire, and legend has it she was known for breaking her fast with paprika and fish. Her turquoise nose-piece represents the blue flame at the center of a blaze, while the piece coming off the back of her head is the Aztec symbol for fire. Take a close look and you’ll see that this serves as the basis for the main symbol in the logo.

We believe the connections to ancient Latin America in general as well as seasoning and fire (sazón y fuego) make it a special representation of our restaurant. Thank you to our friend, Matt Wagner, for his creativity and design expertise on this project.

Evan is well traveled and highly experienced after working in large cities around the country. He’s a consummate hospitality professional with the skills to lead front and back of house, as well as our growing portfolio of restaurant concepts and we couldn’t be more thrilled to have him join us.

- Has held various management roles at prestigious hotels, like The Beverly Wilshire Hotel in Beverly Hills, CA and The Cosmopolitan Hotel in Las Vegas, NV
- Was General Manager for various restaurants under the guidance of hospitality groups Misery Loves Company, Lombardi Family Concepts, and Exxir Hospitality in Dallas, TX
- Husband to Ann, dad to Archer
- Says his favorite menu item is impossible to choose, but loves each restaurant’s monthly specials and seeing our team innovate and create new things
